WHere is an easy version of a beverage featured on the seasonal menu. It's a large-volume premix which is packed full of essence associated with Christmas time, making it ideal for a festive gathering. Save the extra syrup you can use for breakfast cocktails, desserts, or to make additional servings of the drink.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Place the listed ingredients inside a pot, bring to a gentle boil, agitating to dissolve. Next, take off the burner and let it to cool down completely. Transfer to a sterilised bottle, seal keeping it chilled, where it will keep for around a month.
To make Premix: Mix all the spirits and syrup into a sizeable container, leave to sit for one hour, then filter it preferably using a fine cloth, so it's fully clarified.
For serving: Pour 85ml of the premix into your stirring glass filled with ice, and agitate gently for a minute to chill. Pour to a cold coupe glass or a similar vessel, garnish with the cranberries and complete it with a quick spritz with the mandarin essence above the glass.
